Delicious special blueberry muffins, perfect for a picnic in the park!
Preheat oven to 400 F. I use a probe thermometer since my oven temperature can be inconsistent.
Butter and flour your muffin pan. This recipe will make 6 large muffins or 12 small (cupcake-sized) muffins.
Combine in your stand mixer or large mixing bowl and mix/whisk together:
- .75 stick (6 tablespoons) unsalted pot butter, melted and cooled
- 1 cup packed light brown sugar
- .5 cup whole milk
- 1 large egg
In a separate bowl, stir/sift together:
- 1.5 cups all-purpose flour
- 1.5 teaspoons baking powder
- 1 teaspoon cinnamon
- .5 teaspoon salt
Slowly mix portions of the dry ingredients into the wet mixture until combined. Gently fold in:
- 1.5 cups blueberries
Baking time will depend on the size of your muffin cups. Bake in the center of the oven for 20-30 minutes or until a knife/toothpick inserted in the center of a muffin comes out clean. Cool completely on wire rack. Run a thin knife around the edges of each muffin to free any stuck blueberries from the walls of the muffin pan, and turn muffins out of the pan. Enjoy!
